Sprouts

Does anyone have these 3 lids? I purchased them years ago for bean sprouts. Notice the three different size mesh in each top - you start out with the finer mesh and move progressively to the larger mesh. The jar is just a standard wide mouth jar. It did not come with the lids.

First one soaks about 2 tablespoons of alfalfa sprouts over night in the jar. The next morning you dump out the water. Using the fine mesh top, the little seeds do not fall out the top when you dump the water. Rinse twice a day but do not soak them anymore. I soaked the seeds overnight from Thursday to Friday morning.

You will begin to see the little seeds sprouting.

This was Sunday morning. Each day when you rinse the seeds, you want the little hulls to float to the top and out of the jar. As the sprouts grow, you can change the fine mesh to the larger mesh because the sprouts won't wash through the mesh as they get larger, but, hopefully, the hulls will wash through. Some do, some don't.

And here is this morning's bean sprouts. All ready for my sandwich at lunch and on my salad this evening for dinner.

Crepe magic

Yup, I'm not done yet trying to use each one of my many kitchen gadgets.. and today it was time for the electric crepe maker! I suppose it is sort of like "cheating" for "real" chefs who make crepes the authentic way.

The batter was straight-forward. Flour, salt, melted butter, eggs and milk.
After I mixed it up, I let it rest for an hour so that the flour would become incorporated into the batter.
(No, I didn't think that up myself, the directions told me to do that. Good that I wasn't hungry for crepes that minute! I don't like to wait...)


I don't think this would pass today's safety standards. No appliance purchased these days has a cord that long. And the handle got hot, even though it had some sort of insulator thing on it.
I had to use a pot holder once the thing was hot. There was no temperature control or indicator light. Just plug in and when you think it's hot enough... well, it's hot enough, right?


Pour some of the batter in this made-to-match shallow concave plate.

Invert the entire crepe maker and dip into the batter and then turn it back over and let the batter cook on the hot surface for about a minute.

They really come out very thin!

I'm sure there are many many ways to enjoy them, but for us, it seems to be our homemade chokecherry syrup!
I'm not sure they are better than Wally's skinny pancakes. In fact, I'm sure they are NOT better. These are so thin, you almost wonder what you are eating!

Yogurt maker

Continuing in my quest to actually USE all my kitchen gadgets, I decided to once again make some yogurt. It's a relatively easy process with a yogurt maker.
I boiled a quart of milk and then let it cool to 125 degrees. At that point I added a heaping tablespoon of plain yogurt.
I ladeled the mixture into the yogurt containers that came with the yogurt maker.

Here they are all filled and ready to go into the yogurt maker.
At this point it just looks like milk.

This item, which must be about 30 some years old, is simply a way to keep the yogurt cups in a continous low-warm environment. Plug it in and leave it alone for about 10 hours.

I am always amazed when I take the lid off the yogurt containers to see it has thickened and become yogurt! Seems like magic!
Now I have to come up with a good way to add fruit that doesn't defeat the purpose of homemake yogurt. Any ideas?

French Bread in clay cooker

I love baking bread. My bread machine and I are very good friends!
One thing I have had fun trying is making the dough in my bread machine and then finishing it up in some other fashion. I have had good success with baking this french bread in my old clay cooker.
I line the bottom of the clay cooker with parchment paper to prevent any sticking. It's wonderful stuff. The top of the clay cooker is soaked in water prior to baking. Then during the baking process, lots of moisture is released producing a wonderful crust.

I just love taking pictures of food! So silly...

We had some fun with Tobias when he was sitting in his high chair making "buzzing" noises. Maybe the funniest part of this video, though, is listening to the adults sound ridiculous trying to get a baby to make noises. Go figure.

Easter Joy

We had a blessed Easter today; a wonderful church service and a lovely time with John, Sara and Tobias.

We had nice weather for the weekend and took a walk yesterday and today.


Tobias enjoyed the fresh air but he was not sure about touching the grass.

After the crackers...

In the interest of full disclosure... I'm not really all that healthy in my food choices...

Crackers

Okay, I'm not really a food nazi, but I am paying attention to all the foods I purchase and how healthy or not they may be. I think that we, in our present culture, eat poorly - too much processed foods, fast and easy meals that are laden with too many perservatives, too much salt, sugar and fat. I try (but do not always succeed) to eat well and I have thought that even following the mantra of "all things in moderation" it may well be that too many "moderate" amounts of something like, say, MSG, adds up to too much MSG.

I have started reading labels. REALLY reading labels.

Did you know that MSG (which is in no way good for you) goes by many many other names?
When they say "no MSG added" that it may be IN there in other ingredients? They just didn't ADD MSG? Google "other names for MSG"... interesting. Depressing.

It takes a long time to shop when you read labels.

And I did not know until last week that the canned tuna fish, solid white albacore tuna in water, also had "vegetable broth" added??? Can you tell me WHY?
Newsflash: there is a "gourmet choice" level of the same brand that does NOT have the added vegetable broth. Hmmm..

I have, if you are a follower of my blog, made homemade english muffins. I am no longer purchasing the ones from the store. I told Mr. Hubby that when you buy something that never seems to spoil....... lasts a pretty long time because of all the preservatives..... that that is NOT a good thing. So, homemade english muffins it is. And they are good too!

Today I made my first attempt at homemade crackers.
Read the list of ingredients on your box of crackers . Most have a long list of ingredients.
There is ONE box of crackers that impress me: Triscuits - they list only 3 ingredients!
Wheat, Oil and salt. That is amazing.

Kitchen A la Candis baked crackers today.

Whole wheat flour, salt, oil olive and water.
Check them out.

First I made the dough in my food processor. One two three. Quick as can be.
Above: Here is the ball of dough.

I rolled out the dough to 1/16" thin - I rolled it on my silicone baking sheet and simply transferred the whole sheet onto a cookie sheet for baking.
(Tip: place a damp washcloth under the silicone sheet and it will not slip around when you roll the dough.)
I decided I would "score" the dough because I wanted nice, neatly shaped crackers.
I used a ruler and a pizza wheel.

They baked for 12 minutes in a 400 degree oven. Here they are after baking.


And here they are all ready to eat!
I made a second batch that I put sesame seeds on top of the crackers.
The third batch I added a teaspoon of italian herbs to the dough. They really smelled great baking and I love the way they taste, too.

And here is the close-up of my homemade whole wheat cracker!
I'm rather pleased.

Back to building...

The weather has not cooperated nicely, but things have progressed on this nice timberframe home that Wally is building for a customer. Yesterday I got to see the progress.
Behind the home is a large lake. It will be a wonderful place come summer!

The timberframe company does wonderful work. I just loved the beams and ceiling.




Now there is quite a bit of work to do inside but things are warming up, so it's "full steam ahead."
